  • How much meat can I expect?

    Savor the complete experience of a side of beef with our Half Beef Share, which provides approximately 250 pounds of premium Angus Beef. This option allows you to personalize your cut sheet, selecting the cuts that perfectly suit your family's preferences.

    Quarter Share - If you plan to split your Half Share with a friend, you would generally fill a standard refrigerator freezer or slightly exceed half of a small chest freezer.

    Half Share - May require a dedicated chest freezer (around 7-10 cubic feet).

    Whole Share - Requires a larger chest freezer (around 17 cubic feet).

    What cuts will I get in my beef share?

    Any time you are buying a beef share, you are buying into cuts from the whole animal. You can expect 15% premium cuts, 35% secondary muscle roasts and steaks, and 50% grind.

    As an example, below is what a HALF SHARE could look like:

    35 pounds of primary cuts such as: Ribeye, New York strip, Filet Mignon (tenderloin), Tri-tip, Top Sirloin, etc.

    90 pounds of secondary muscle roasts and steaks such as: Chuck Roasts, Round Roasts, Fajita Strips, Flank Steak, Osso Bucco, Short Ribs, Stew Meat, Denver Steaks

    120 pounds: ground beef, chorizo and/or breakfast sausage

    Add ons by request - bones, beef fat, organ meats

    How much will I pay per pound?

    Sloan Ranch charges $3.50 for each pound based on the animal’s “Live Weight.” In addition, Old Fashioned Country Butcher imposes a processing fee of $1.70 per pound for the “Hanging Weight,” which is typically 60% of the initial “Live Weight.” Once all cuts have been processed, you can expect to take home approximately 45% of the original “Live Weight.”

    For a whole share:

    Live Weight = 1200lbs x $3.50 = $4,200 paid to Sloan Ranch

    Hanging Weight = 720lbs (60%) x $1.70 = $1,224 paid to Processor

    Slaughter Fee = $200 per animal paid to Processor

    Packaged Meat = 540lbs (45%)

    Total: $5,624 (or 540lbs @ $10.40/pound)

    **Half Shares represent about half of the total amount, with the slaughter fee divided equally between both buyers.

  • How it works

    A few times a year, we will post upcoming pre-scheduled processing dates through our website and newsletter. Following this announcement we will release available Half Shares in our Ranch Store.

    1. Reserve Your Spot
    Select your Half Share of beef from our Ranch Store. Or purchase (2) Half Shares for a Whole Share. Place your $300 non-refundable deposit to secure your share of our 100% homegrown Angus Beef. This deposit will be applied towards the total purchase price.

    2. “Live Weight” Fee
    In accordance with USDA standards, once your deposit is paid, you officially become the proud owner of your very own steer! We will conduct a final weigh-in the week prior to transferring the animal for processing. Sloan Ranch will issue you an invoice based on the final “Live Weight” at a rate of $3.50 per pound. For instance, a steer weighing 1,200 pounds will amount to a Whole Share totaling $4,200, payable to Sloan Ranch. A Half Share would equal $2,100.

    3. Transfer of Animal - Processing Fee
    We will transport your animal to Old Fashioned Country Butcher in Santa Paula, CA, at no cost to you. You will collaborate directly with our dedicated butcher, Kent, to select custom cuts specifically tailored to your family's preferences, whether you have a Half or Whole Share of beef.

    After you have made your selections, you will pay Old Fashioned Butcher a processing fee of $1.70 per pound based on the “Hanging Weight,” which is roughly 60% of the original “Live Weight.” Additionally, there will be a $200 slaughter fee per animal, which will be split for Half Shares.

    Note: If you decide to purchase a Whole Share you have the option to select a different butcher of your preference—please be aware that travel fees may apply.

    4. Pick Up and Enjoy!
    Old Fashioned Country Butcher offers a 21-day dry aging process for all beef, after which they will prepare your specific cuts. Kent will contact clients directly when their meat is ready for pickup. Each piece will be vacuum sealed and clearly labeled. Although custom cut and wrap butchers can process animals for owners of live livestock, please note that these cuts of meat cannot be sold in the retail market, only privately.
